In recent years, the Gold Coast has attracted a number of world-class hotels and resorts to its shores, with some impressive names in the pipeline including The Ritz-Carlton, St. Regis Hotels & Resorts and Hyatt’s Andaz brand, to name just a few. One of the most exciting additions to the city, however, is no longer just a future vision – Mondrian Gold Coast has made its long-awaited Australian debut, ushering in a new era of lifestyle luxury on the southern Gold Coast. We took a walk-through ahead of opening weekend, and here’s what we saw …
At long last, Mondrian Gold Coast is open. Situated along The Esplanade, this striking 24-floor hotel, designed by Fraser & Partners, is Mondrian’s flagship Australian destination and the first new five-star luxury hotel to open on the Gold Coast since The Langham, Gold Coast in 2022. Since debuting in Los Angeles in 1996, Mondrian has expanded to cultural hotspots around the globe, with its first Gold Coast location set to continue that legacy in spectacular style, offering guests an immersive, design-led experience.
Epitomising coastal luxury, Mondrian Gold Coast features 208 spacious accommodations, including 132 studios, 63 suites, two- and three-bedroom homes and the hotel-crowning Sky House. With rooms roughly twice the size of the national average, the hotel redefines the experience of beachside accommodation in Burleigh Heads. Designed by California-based Studio Carter, many of the rooms offer full kitchens, open-plan living and dining areas, ensuites, and of course, panoramic views across the Pacific Ocean, Burleigh Headland and the hinterland. Standard rates start from $749 per night for a Studio King.
As always, our attention is firmly set on the culinary offering, and Mondrian Gold Coast has delivered in spades. On the ground floor is where you will find LiTO, a vibrant all-day coastal Italian restaurant and bar designed by Alexander &CO. to deliver elevated simplicity with relaxed Burleigh charm. Led by Italian-born head chef Andrea Morigi (formerly of Merivale’s uccello) the all-day restaurant opens with a selection of breakfast classics such as spiced-avocado bruschetta with stracciatella to fritatta della nonna, LiTO’s signature open-faced omelette. Come lunch time, the selection switches to wood-fired breads, salumi and snacks of coral trout crudo and wagyu beef carpaccio. One of the venue’s hero dishes from the pasta section is the southern rock-lobster bucatini, while the rotisserie chicken is a stand-out main.
Upstairs on the third floor, Haven, also designed by Alexander &CO., captures the rhythm of Burleigh. Executive chef Aaron Teece (formerly EST., Felix, Manly Pavilion and Studio Neon founder) has curated a refined-yet-approachable menu, spotlighting seafood, woodfire cooking and regional sourcing. The menu is designed to shift daily, depending on what the team can get their hands on. Small plates range from hand-picked spanner crab dressed with with creme fraiche, capers, citrus and soft herbs, and the likes of line-caught daily fish crudo. When it comes to fish, you can choose your own finish – grilled over flame, fried crisp, wood-fire roasted or delicately steamed. The lobster frites is set to be a crowd favourite, alongside the bone-in sirloin. From long wine-filled lunches to lounging poolside in a private cabana, Haven and its adjoining pool bar is set to become a sophisticated retreat for discerning locals and visitors. Bringing the beach club vibes, Haven will also boast a roster of live performances by emerging and national acts.
Rounding out Mondrian Gold Coast’s offering is CIEL Spa, which is set to open later this month. The dedicated wellness floor is set to offer cutting-edge bio-wellness therapies and restorative treatments to deliver extraordinary results.
