But the venue was ressurected in 2025 by a crew of enterprising hospitality veterans, who transformed the storied space into Bonnie Doon Public House. Loosely inspired by the humble Aussie vacation spot from The Castle, Bonnie Doon blends nostalgia with comfort, featuring homey interiors, each room infused with character – from a sun-drenched front bar to an upstairs pool room for events. The menu, led by chef Dylan Swepson, reimagines Aussie classics like damper with Vegemite honey butter, mini Dagwood dogs, kangaroo pies, and fairy bread milk buns, walking the line between fun and familiar. Complementing the fare is an all-Australian drink selection spotlighting independent craft breweries and natural wine producers, along with playful cocktails like the Weis Bar-inspired Whaddya Call That. Bonnie Doon retains the heart of its predecessor while carving out its own identity as a nostalgic, Aussie-style public house.
