Eclair at the Bay, the patisserie concept founded by Pavel Stolarsky and Mary Martin, has arrived in Newstead, evolving from a Byron Bay-born eclair delivery service and market stall into a polished inner-city destination. Now operating from a larger, European-inspired space with an expanded production kitchen, the team is serving a broad range of French-style pastries – from signature eclairs and choux creations to tarts, craquelins and celebration cakes – with a focus on premium ingredients and rotating flavours. With ambitions to grow its footprint across Brisbane, Eclair at the Bay pairs refined technique with a sense of joy and accessibility, bringing a taste of its coastal origins to a wider audience.
