Kosta’s Takeaway might trade in paper-wrapped sandwiches, but founder Benjamin Terkalas runs the operation with the precision of a restaurant kitchen. Launched in Sydney in 2021 and now open at Gasworks Plaza in Newstead, the chef-driven concept has built a following for its meticulous processes – from house-made ferments and sauces to brined, crumbed-to-order chicken schnitzels. The Brisbane outpost, the brand’s first in Queensland, sees Adam Wolfers (ex-Gerard’s, Anyday Group) consulting on the menu, which pairs favourites like the Supa Deli, cheesy tuna melt and beef-and-pickles with local exclusives including a chicken shawarma with sumac onion and white-sesame tzatziki, a breakfast yiros with bifteki, egg and cheese, and a barley and falafel salad. Rotating, chef-led specials will also feature, alongside coffee from Canberra’s Ona and a small selection of sweet treats.
