More than 15 years after first dreaming up the concept, hospitality operator Amanda Scott (Farmhouse Kedron and Oh Boy, Bok Choy!) has opened Sancho Taqueria & Tequileria, a colourful Stafford eatery dedicated to the distinctive flavours and traditions of New Mexican cuisine. Inspired by Amanda’s family connection to Albuquerque and named after Don Quixote’s loyal companion Sancho Panza, the venue serves handmade sopaipillas, tacos filled with pork carnitas, 14-hour brisket, braised chicken and battered fish, alongside larger plates such as lamb barbacoa, grilled agave-glazed chicken and sugarloaf cabbage with wildflower-smoked chilli honey. The drinks program is equally considered, boasting a curated selection of tequila and mezcal, six margarita variations, classic cocktails, Spanish and New Zealand wines, and Mexican-inspired non-alcoholic refreshments, all served within a vibrant space inspired by the colours of New Mexico’s Sandia Mountains.
