Hidden beneath 109 Edward Street in Brisbane City, Shaman is a moody rum and tequila bar from hospitality veteran Peter Hollands, the co-owner and operator of Frog’s Hollow Saloon, Alice and The Alliance Hotel. Inspired by the music and free-spirited rhythm of Carlos Santana, the subterranean space pairs lamp-lit interiors and eclectic design with a back-to-basics approach to cocktail making – think juiced-to-order citrus, frozen glassware and no block ice. The menu spans more than 100 rums and 50 tequilas, with cocktails divided into playful categories such as ‘Always On’, ‘Sometimes On’ and ‘Something Silly’, alongside icy Estrella beers and South American wines. With its fluid playlist, approachable energy and focus on timeless hospitality, Shaman invites guests to linger, sip and lose themselves in the rhythm.
