SUUM is an intimate 16-seat Korean fine-diner tucked inside a nondescript lobby off Charlotte Street in Brisbane City. Helmed by chef Andy Choi (The Fat Duck, Disfrutar), the restaurant offers a 14-course omakase that blends traditional Korean flavours with molecular gastronomy techniques. The dark, minimalist space is designed to heighten focus on the food, with each dish plated on custom Korean-made ceramics and presented under individual pendant lights. Expect seasonal snacks, show-stopping mains, house-made makgeolli and a drinks list featuring Korean rice wines alongside French and Australian bottles. SUUM means “to breathe” – a fitting name for a dining experience that invites guests to slow down and fully immerse.
