After five years tantalising the taste buds of Byron Bay’s baked goods lovers, Eclair at the Bay has announced that it will be shuttering its coastal home in anticipation of a move north. The patisserie will reopen in early 2026 in Newstead, with a brand-new production facility and retail space making and selling a range of decadent delights, including eclairs, profiteroles, craquelins and croquembouches – plus a selection of bespoke celebration pieces. Before their bricks-and-mortar patisserie became a cult favourite amongst Byron Bay foodies, Pavel Stolarsky and Mary Martin’s patisserie concept started as a pandemic-era pastime.
Born as a home-delivery service and market fixture, Eclair at the Bay first made a name for itself with Michelin-trained pastry chef Pavel’s take on modern choux pastry – a dessert that, at the time, was still largely unheralded in Australia. Soon enough, however, Eclair at the Bay became a household name, with behind-the-scenes videos of Pavel’s process cultivating a fanbase beyond the confines of the Northern Rivers.
And now, five years on, Pavel and Mary are set to introduce their handcrafted treats to a whole new audience, with plans underway to transport Eclair at the Bay to Commercial Road in Newstead (the old Cake & Bake site) early next year.
“Brisbane feels like the natural next step for us,” say co-founders Pavel and Mary in a statement. “We can’t wait to open our doors, share our desserts with the community, and continue creating modern, memorable pastries that bring people together.”
Once open, Eclair at the Bay’s Newstead flagship will boast a production kitchen and a retail shopfront serving its acclaimed range of patisserie treats, from tarts and eclairs to gluten-free mousse cakes, craquelins and croquembouches. The extra space will also allow the team to experiment with new flavours and seasonal creations, plus bespoke offerings for weddings, birthdays and corporate events.
Unfortunately, Eclair at the Bay’s move means that its Byron Bay outpost will close. But it’s not all bad news – Mary and Pavel will be hosting a Farewell Weekend on November 29–30, giving its Byron-based fans one last chance to enjoy their favourite desserts before the patisserie packs up.
“Byron shaped our story, and Brisbane is the next chapter,” said Pavel and Mary. “From home deliveries and market stalls to our first shop – and every wedding, birthday and celebration in between – we’re so grateful to the community who supported us. This move isn’t the end; it’s the beginning of something even sweeter.”
