Grantz Dining Room is the new Southport restaurant from award-winning chef Grant Madgwick and hospitality veteran Antz Do Rozario. Located at the base of TRYP by Wyndham within the Imperial Square precinct, the sprawling dining room brings a little old-school theatre back to eating out, pairing modern-Australian dining with live entertainment, tableside cookery and genuine hospitality. Grant’s signature Trust the Chef experience is the star of the show, with the five-course degustation shaped by what he finds at the markets and incorporating plenty of interaction along the way. The broader menu spans oysters, sashimi and seafood through to Wagyu, lamb and pasta, with familiar favourites from the pair’s River House days appearing alongside new creations.

The venue is still evolving, with live seafood tanks, a 4.2-metre dry-ageing room, dessert trolley and port-and-cognac trolley among the additions planned as part of its transformation.
