SHŌTŌ is the slick new snack-bar sibling to Burleigh favourite Etsu Izakaya, now open in the former Iku Yakitori Bar space. Created by Etsu owner Nathan Horwood, the intimate 64-seat venue leans into Japanese-inspired small bites, cocktails and late-night energy, with a menu built around robata skewers, hand rolls, sashimi, tacos and elevated snacks designed to share. Signature dishes include kingfish tacos with avocado mousse and jalapeno salsa, wagyu cigars with black garlic and truffle mayo, lobster katsu sandos and the already cult-favourite wagyu sando. The drinks list features Japanese-inspired cocktails, sake, whisky, wine and a playful smaller-format cocktail section dubbed “Shōtōs”. The fit-out feels moodier and more refined than its predecessor, pairing darker finishes and low lighting with the relaxed, energetic atmosphere Etsu fans already know and love.
