



From the owner of Etsu Izakaya comes SHŌTŌ, a smaller, more intimate sibling spot set to open in Burleigh Heads. Taking over a site previously home to Kin and, before that, Iku, the venue carries a quiet sense of history while carving out a new direction. The bar-led concept leans into yakitori and hand rolls, with executive chef Leo Militao (fresh from Japan) delivering a tight, seasonal menu alongside a handful of Etsu favourites. Expect a darker, more refined space, a considered cocktail list inspired by Japanese cities, and a focus on settling in – before dinner, after, or instead.
