This Valentine’s Day, treat your loved one to an unparalleled culinary experience with a sumptuous flame-kissed degustation at The Fireplace at InterContinental Sanctuary Cove Resort. Award-winning head chef Randy Tablan has curated an exclusive five-course dining experience for Friday February 14, which sees the finest seasonal produce from the local region delicately infused with deep flavours from the dancing flames of the restaurant’s wood-fired oven.
Settle in with glass of Mumm champagne on arrival, before indulging in the first course – fresh natural oysters with mignonette and shiraz pearls. The menu moves onto smoked mozzarella with heirloom tomato, gremolata, fennel, Spanish onions and sherry vinegar, before meandering back to the ocean with a dish of Hervey Bay scallops with charred orange, parsnip puree, bacon crumb, micro greens and a citrus-butter sauce.
For the main event, you’ll indulge in a delicious duet – grilled wagyu beef rump and tender lamb shoulder, served with smoked sweet-potato mash, sauteed asparagus tips, Dutch carrots and Bordelaise sauce. The romantic five-course affair will conclude in the most indulgent way possible – with a delicate raspberry-centered dark-chocolate marquis, complete with rose jelly, raspberry-rose coulis, cocoa marshmallow and chocolate sable.
The five-course degustation menu, which meanders from land to sea in the most mouth-watering of ways, can be further elevated with a sommelier-selected wine pairing for an additional $85 per person. Vegetarian, vegan and non-alcoholic options are available.
