Cult-cookie empire Brooki Bakehouse is opening on the Gold Coast this weekend

Cult-favourite bakery Brooki Bakehouse will open its first Gold Coast store this Saturday June 28, with a new pink-hued dispensary of the TikTok-famous treats landing at Pacific Fair just in time for the school holidays. 

Founded by baker Brooke Bellamy, Brooki Bakehouse first made waves in Brisbane with its signature New York-style cookies – crisp on the outside, gooey in the centre and loaded with nostalgic flavour. The brand quickly shot to global fame thanks to Brooke’s viral ‘Day in the Life’ videos, sparking massive queues, sold-out bakes and a flood of Instagram snaps from fans eager to get a bite.

For Brooki fans who’ve made the pilgrimage to the Fortitude Valley flagship, you know the drill – the queues, the anticipation and that first glorious bite. Now, Gold Coast cookie lovers can skip the M1 – Brooki goodies are finally within reach. The new Pacific Fair store will serve up Brooki’s best-sellers daily, including the famed NYC-style cookies, fluffy cupcakes, decadent brownies and a full range of playful pink Brooki merch.

Cookie lovers will find the new Brooki space on the ground floor outside Cotton On. Plus, to make the launch even sweeter, the Brooki team will be giving away free cookies to the first 100 customers from 9:00 am on Saturday. If Brisbane’s queues are anything to go by, early birds will have the edge!
