After three years of brewing, building and a fair share of banter, Padre Brewing Co. is almost ready to throw open the doors on its brand-new Miami home. Opening in November, the striking, custom-built brewery and restaurant will blend craftsmanship, creativity and coastal character in equal measure. Here’s what you can expect …
Like so many good ideas, Padre Brewing Co. started over a beer. The business is the brainchild of long-time mates Mitch Carlin and Pete Morris (who have been friends longer than they haven’t) and hospitality veterans Aaron Wilson, Nathan Zukerman and JD – the crew behind burger-slinger Ze Pickle. Together, they’ve built something that feels unmistakably Gold Coast – a place where the beer is serious but the vibe is anything but.
“At Padre, we care about two things – good company and great beer,” says Pete Morris, Padre’s co-founder and brand director . “We’ve done our best to create the perfect space for one, while making the other.”
You’ll find Padre Brewing Co. coming to life at 9 Ozone Parade. Once home to a pottery studio and, more recently, an axe-throwing venue, the site has been completely transformed in collaboration with Melbourne’s Studio Y.
“We’ve all come from creative industries – skaters, musicians, photographers and designers,” Pete says. “It’s kind of the intersection of all those worlds. We wanted a space that feels like us, but still makes sense for the community.”
The 160-seat venue blurs the line between bar and brewery, offering booth seating, communal tables and a sprawling bar pouring 14 beers – all brewed on site. The design reflects the founders’ creative roots, with custom timber detailing, curved concrete, walnut accents and warm industrial finishes creating a tactile, welcoming space.
Step in from the street and you’ll pass an alfresco area that leads to a bustling dining room, while behind glass, the Padre team brews its next line-up of suds.
At the helm of the brewery is Mitch Carlin, who traded life as a wedding photographer for the brewer’s apron. The beer list will span crisp lagers, easy-drinking pale ales and hop-forward IPAs, alongside richer, darker styles and seasonal rotations.
“We brew beer for people who care as much about the company they keep as the beer they drink,” Mitch says. “If it’s not good, we’re not about it.”
“There’ll be something for everyone – beers your dad would drink and ones the craft crowd will love. Easy-drinking, but with substance.”
While it’s undoubtedly a challenging time for breweries, Padre is taking a refreshingly direct approach. The team isn’t chasing distribution or shelf space – instead, it’s keeping things local and intentional, brewing for the venue itself and pairing each pour with a food menu designed to complement, not compete.
“It’s not about pumping out cans to fill bottle shops,” explains Nathan. “Our model is to brew for our own restaurant. We’re focused on keeping quality high and the experience consistent.”
The menu is set to take cues from elevated pub fare with sharp technique and a focus on quality ingredients. Think comfort food with character – familiar, flavourful and made to pair perfectly with a cold one.
As for the name, it started as a bit of a mix-up. Mitch and Pete originally mistook padre for compadre (Spanish for ‘friend), but the word stuck – and as it turns out, it fits. Padre, meaning ‘father’ or ‘guide,’ nods to the group’s ethos – a place built on shared effort and genuine connection. Or, as Pete puts it, “Great beer shouldn’t be a solo effort.”
With its skate-culture spirit, design-led interiors and local-first mindset, Padre Brewing Co. already feels destined to become Miami’s new go-to for lazy afternoons, lively nights and everything in between.
