Aviary Rooftop to elevate New Year’s Eve with a glamorous Saints & Sinners party

Aviary Rooftop Bar is set to close out 2025 with a New Year’s Eve celebration steeped in late-night glamour and summertime indulgence. The sky-high Saints & Sinners party will transform the Southport rooftop into a sultry, sky-high playground of sharp silhouettes, bold colour and a mischievous theme that sets the stage for a night of bold style and plenty of allure. 

Guests are encouraged to embrace the dress code of ‘cocktail attire with a saintly or sinful touch’. Expect sleek suits, striking dresses and accents of red, white or black woven through the crowd, with accessories like halos, angel wings and devilish horns adding a playful nod to the theme.

An array of mouth-watering food will flow throughout the evening, beginning with roving canapes and continuing with Aviary’s signature Italian-style woodfired pizzas. As the night settles in, the dessert bar will open for late-night indulgence.

Guests will also be treated to a 4.5-hour ultra-premium beverage package running from 8:00 pm to 12:30 am, with a generous line-up of premium spirits, curated wines, beer and cider poured throughout the evening.

Roaming angels and scarlet-clad ‘sinners’ will animate the space, while the neon-lit Confessional Booth will offer a suitably dramatic backdrop for those leaning into the theme. DJ Marea will shape the soundtrack with deep beats and sax-infused house, gradually building the rooftop’s rhythm as the countdown approaches.

As midnight draws near, Aviary will heighten the atmosphere with fire twirlers weaving across the deck and a glittering champagne tower ready for its celebratory pour. Fireworks at both 9:00 pm and midnight will illuminate the coastline, with the rooftop offering one of the Gold Coast’s best vantage points for viewing both fireworks displays.
