

For seafood lovers, opportunities don’t get much rarer than this. On Sunday August 2, Miami Fish Market will celebrate its fifth birthday by bringing the ancient Japanese art of Maguro Kaitai to the Gold Coast, inviting guests to witness a master break down an entire wild bluefin tuna – the kind of mesmerising culinary theatre usually reserved for Japan’s top seafood markets – before it’s transformed into impossibly fresh nigiri just moments later.
To celebrate five years of serving some of the Gold Coast’s best seafood, sushi and sashimi, the premium seafood destination is hosting a rare Maguro Kaitai – a traditional Japanese tuna cutting ceremony that showcases the remarkable precision, craftsmanship and skill behind preparing one of the world’s most prized fish.
Taking centre stage is Narito Ishii San, one of Australia’s most respected tuna buyers and Miami Fish Market’s long-time bluefin supplier, who will expertly carve an extra-large wild bluefin tuna in front of guests. As he works his way through the fish, Narito will share insights into its most sought-after cuts, from the richly marbled otoro and chutoro to the lean akami.
As if watching the performance wasn’t enough, the experience continues with Brisbane’s acclaimed Shimpei San from Sushi Room at The Calile Hotel, who will prepare fresh nigiri using the premium cuts moments after they’re carved. Guests can also elevate the tasting even further with optional additions of premium short-spine uni and caviar, making for a seriously memorable Sunday morning.
The intimate ticketed event is limited to just 60 guests, but the celebrations don’t stop there. From 11:00 am, Miami Fish Market will throw open its doors for a public birthday celebration, with DJ Nicka on the decks, complimentary tastings of freshly sliced bluefin sashimi, caviar bumps and freshly shucked oysters (while stocks last), alongside birthday specials throughout the day.
Owner Paul Gloftis says the event is about celebrating the relationships and craftsmanship that have shaped Miami Fish Market over the past five years.
“We wanted to mark five years with something genuinely special – an experience that celebrates not only the quality of the seafood, but the skill and people behind it,” he says.
