Woodfired Mediterranean feasts, poolside cabanas, sunset cocktails and a rather impressive culinary pedigree. Australia’s first Andaz hotel is opening in Broadbeach this November, and while the arrival of the luxury lifestyle brand is exciting in itself, it’s the four distinct dining and drinking destinations that have really caught our attention. Here’s a taste of what’s to come.

Andaz Gold Coast is preparing to make its debut at The Star Gold Coast precinct next month and one thing’s for certain, it’s not arriving quietly. Four new venues will take guests from morning coffee through to cocktails after dark, with British-Australian executive chef Matthew Bentley overseeing an ambitious food and beverage program.

Matthew brings an impressive international pedigree to the role, having honed his craft in some of Europe’s most celebrated kitchens. His experience spans Michelin-starred restaurants The Old Vicarage in the UK and Vermeer and De Moerbei in the Netherlands, alongside London’s renowned ROKA Restaurants and two years exploring Nordic cuisine in Norway. More recently, time spent in Spain’s Basque Country has deepened his appreciation for regional produce and traditional cooking techniques.

“We’ve created four very different experiences as we want people to come for a coffee, stay for lunch, meet friends for a drink or make a night of it, and always find another reason to come back,” Matthew says.

The headline act is Nove, a Mediterranean restaurant drawing on the culinary traditions of Catalonia, the Basque Country, the Côte d’Azur and Italy. Here, Matthew is joined by Brazilian-born chef de cuisine Rafael Dias, whose childhood spent cooking over open fires with his family continues to influence his approach. Rafael is no stranger to the Gold Coast dining scene either, having spent more than a decade in kitchens including The Star, the Gold Coast Convention and Exhibition Centre and The Valley Estate.

Fire will be central to Nove’s offering, with a stone-hearth oven responsible for dishes such as Sommerlad heritage chicken, slow-roasted in a clay pot before being finished over intense heat for caramelised skin and served with mushroom and brandy sauce. From the coast, expect koji-glazed Moreton Bay bugs with Spanish Bomba rice, squid ink and piquillo aioli. And to add a little drama, the tiramisu will be finished tableside. Wine lovers will have around 160 bottles to explore, spanning Italy, Spain and France alongside Queensland producers including Ballandean Estate, Symphony Hill and Golden Grove.

For something a little more casual, Vista Lounge will be the hotel’s all-day gathering place, beginning with ST. ALi coffee, Teadrop matcha and signature cold-foam drinks. Breakfast will bring Casa Motta ricotta hotcakes with Hampson honeycomb butter, while the bakery counter will tempt with an Andaz crepe layer cake and an exclusive white chocolate and strawberry creation from Milkman’s Cookies. As the day unfolds, Vista will move into relaxed all-day dining.

The mood shifts again at Andaz Pool Club, where the menu takes its cues from the Levant. An Asado Parrilla grill will cook meats slowly over natural wood charcoal, while a high-heat oven will turn out fluffy flatbreads. Expect Fremantle octopus skewers with taramasalata and parsley, alongside pita topped with haloumi, spiced honey, tzatziki and pomegranate. Eight private cabanas will be available for hotel guests and visitors to hire, with cocktails, open-air dining and DJs on Fridays and Saturdays adding to the appeal.

When the sun begins its descent, Verde Bar will offer a change of pace. Inspired by the Gold Coast hinterland, the bar will pair deep green interiors with mountain views, signature cocktails and a concise menu of elevated snacks. The Verde Martini, made with burnt-butter gin, is among the drinks to look forward to, while vinyl DJs will take over on Friday and Saturday nights. Queensland producers including White Oat Distillery, Mount Tamborine Distillery and Burleigh Brewing Co will also feature across the hotel’s drinks offering.

Andaz Gold Coast is set to open in November 2026.
