Gennari Group is preparing to make its mark on Nobby Beach with one of its most ambitious hospitality projects to date. Spanning two levels, the striking new destination will bring together contemporary Mediterranean dining, a sophisticated rooftop bar and an extraordinary level of design detail. Meet SŌL Mediterranean and Noir Rooftop, set to arrive in early 2027.
The Gold Coast’s dining landscape has undergone a remarkable transformation in recent years, with a growing appetite for venues that deliver as much in atmosphere and experience as they do on the plate. Few operators have contributed to that evolution quite like Gennari Group. From the enduring appeal of Koi and the lively energy of The Loose Moose to the European-inspired elegance of La Luna Beach Club, the hospitality group has built a reputation for creating destinations with distinct personalities. Now, it’s turning its attention to Nobby Beach, where an extraordinary two-level project is taking shape.
Introducing SŌL Mediterranean and Noir Rooftop, two complementary but distinctly different venues that will occupy the upper levels of a landmark new development in the heart of Nobby Beach. With contrasting design identities and a considerable investment in the finer details, the project represents a significant step forward for the group.
For Gennari Group general manager Steve De Maio, the opportunity was as much about the location as the concept itself.
“I feel like if we did it five years ago, it would have been too early. If we did it five years later, it’d be too late,” Steve says. “Now’s the right time.”
The first level will be home to SŌL Mediterranean, a contemporary coastal restaurant centred on the pleasures of sharing good food. Modern Mediterranean influences will inform a menu that balances lighter seafood dishes, crudo and ceviche with more substantial proteins cooked over charcoal.
“We’re not doing just a steakhouse or a seafood restaurant,” Steve explains. “It’s about food that we can share and have really good times with.”
The dining room will reflect that balance of refinement and energy. Travertine, walnut and Tasmanian oak will create a light, textural palette, complemented by bespoke furniture, architectural arches and expansive floor-to-ceiling windows. A dramatic sculptural spiral staircase will connect the two levels, adding a striking sense of scale to the space.
Above SŌL, the atmosphere will shift considerably. Noir Rooftop will embrace a darker, moodier aesthetic, with black stone, bronze, copper and hammered metallic finishes setting the tone for a sophisticated bar experience.
A northwest-facing deck will capture the afternoon sun and hinterland sunsets, while another balcony will offer glimpses of the ocean. DJs, cocktails and a playful bar menu will encourage guests to settle in well beyond dinner.
Subscribe for updatesThe contrast between the two spaces is central to the project. SŌL will be bright, fresh and Mediterranean in spirit, while Noir will lean into richer materials and a more intimate atmosphere. Together, they’ll offer a seamless progression from an afternoon drink or leisurely dinner to cocktails as the evening unfolds.
For Steve, the attention to detail reflects a broader ambition to create an experience that feels considered from the moment guests arrive.
“We like people to come and have fun at our venues,” he says. “We certainly like people to visit and not just think of it as a mess hall where you’re just getting nutrients. It’s about really having a great time and building those experiences.”
Although Gennari Group has an established presence across Broadbeach and the northern Gold Coast, Nobby Beach represents new territory. Steve is particularly conscious of joining a neighbourhood with an already thriving hospitality community, rather than attempting to redefine it.
“We really want to complement Nobby Beach,” he says, referencing the area’s existing operators. “We really want to be part of that community, and I feel like we can complement them as much as they complement us.”
The group has been undertaking extensive research ahead of the opening, drawing inspiration from restaurants and bars across Australia and overseas. Menus are already in development, although Steve is keeping specific dishes close to his chest for now.
What he is willing to share is the philosophy underpinning both venues – exceptional produce, carefully executed food and an atmosphere that makes people want to stay.
“We never go for hats and this and that,” he says. “We just go for really good environments and try and get people to have really good experiences.”
SŌL Mediterranean and Noir Rooftop are expected to open in Nobby Beach in early 2027.
