Helmed by Leaham Claydon and Jianne Jeoung, the team behind Snug and Jane’s Deli, Bar Cooper’s is a 45-seat, timber-accented neighbourhood bistro built around a woodfire oven and a relaxed courtyard made for casual dinners. At Bar Cooper’s, the focus shifts from Snug’s Korean-leaning flavours to confidently pared-back but elevated modern Australian fare – think cold-poached king prawns with tomato-caper mayonnaise, chicken schnitzel with brown butter and anchovy, dry-aged wagyu cheeseburgers and Angus sirloin with mushroom gravy – with around 80 percent of the menu kissed by flame, backed by a classic-leaning cocktail list and a 50-bottle wine selection split between local and European producers.
