Helmed by former ramen chef-turned-architect Koji Numata, Pompoko Ramen in Coorparoo is the evolution of cult Byron Bay pop-up Gentlemen Noodle, bringing a rare fish-based ramen style to Brisbane. Drawing on northern Japan’s seafood-driven traditions, Koji crafts umami-rich broths over 36 hours using dried fish, kombu and mushrooms, forming the backbone of a tight menu spanning signature shoyu, miso, yuzu shio and vegetarian bowls, alongside house-made gyoza and other sides. Set in a warmly renovated, two-level space designed by Koji himself, Pompoko pairs its nourishing, from-scratch fare with sake, shochu and beer, offering a thoughtful, design-led dining experience that celebrates bot–h ramen and Japanese culture.
