May 13, 2025, updated May 13, 2025

From news of the opening date for one of the year’s most anticipated restaurants to The Summit Restaurant’s magnificent makeover, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

Evra Restaurant
Following the hugely successful launch of its organic marketplace and casual eatery last year, Evra Restaurant in Newstead is finally set to open to the public on Wednesday May 21, with bookings now live. One of the year’s most anticipated restaurant openings, the farm-to-table restaurant concept will pay tribute to the beauty of Australian produce via a season-responsive approach that makes ingredients the star of the show. In addition to filling its larder with ingredients from some of Australia’s most highly sought-after producers – including Friesian beef from CopperTree, chicken from Wombeyan Caves and wild-caught fish from BlueReef – Evra will also use an assortment of home-grown greens and vegetables from its own rooftop garden. Evra’s menu will be rooted in modern Australian cuisine, but with some classic Italian influences added into the mix. Expect a comforting and balanced menu, with highlights including parker house rolls baked in collaboration with neighbour Baker D. Chirico, Albohros Island scallop ‘Rockafeller’ with cider and champagne stock, crudo of the sea with yellowfin tuna, salmon, ‘Paspaley’ pearl meat, coral trout with creme fraiche and Yarra Valley caviar, Aylsebry duck ‘sausage’ with jus gras and Maraschino cherry, Talgai pasture-raised lamb cutlets, and the signature mud-crab lasagna with crab fondue and zucchini flower. The venue will also be home to a stone bar that will be open for walk-ins – the full menu will be available alongside a beverage menu boasting everything from classic wines to crafted cocktails. Head to Evra’s website to make a booking and stay tuned for an up-close look inside the restaurant soon.

The Summit Restaurant
There are few better vantages points of Brisbane’s splendour than the view from atop Mount Coot-tha and no restaurant offers a better place to enjoy the vista than The Summit Restaurant. Mantle Group’s heritage-listed mountaintop dining destination has just unveiled the results of a multi-million-dollar revitalisation, which includes a new-look dining room, a new brewpub-style public bar and a verandah space offering stunning glimpses across Brisbane and out to Moreton Bay. Hogg & Lamb has overseen the venue’s redesign, drawing upon the venue’s natural surroundings and existing heritage charm to create an aesthetic that is polished and elegant, with the view celebrated at every opportunity. The unveiling also coincides with the appointment of renowned chef Kym Machin (formerly of Urbane) as The Summit Restaurant’s culinary head, who is applying his bold, produce-driven style to a modern Australian-inspired menu that is based around five distinct themes – ‘Sea’, ‘Air’, ‘Land’, ‘Earth’ and ‘Garden’. Highlights of Kym’s menu includes goldband snapper with wild garlic and native ginger, roast duck smoked over paperbark, almond-fed pork with pickled apples, and pumpkin agnolotti with candied shoots. A separate bar menu features an array of casual eats, including Rocky Point cobia with buttermilk dressing, goats cheese puffs, lamb tacos and beef and beetroot tartare. The Summit Restaurant’s new look is only the first step in a grand plan for Mount Coot-tha’s pinnacle, with Mantle Group also planning a new two-level pavilion venue, a boutique gin distiller and a new cultural tourism experience. Tiger Burger
If you happen to be in West End today, we suggest making a quick detour down Boundary Street. Why? Because there’s a brand-new burger joint opening that we think you might like. Tiger Burger – a sibling to New Zealand-born burger chain Ziggle – is cutting the ribbon on its brand-new abode, showing off a drool-worthy menu that features classic American eats with some tasty twists. The offering is headlined by a clutch of smash burgers that have been given a flavoursome Korean-inspired kick, including the signature Tiger Burger (a smashed patty of beef chuck and brisket, fresh onions, cheddar, garlic mushrooms, mayo and K-BBQ sauce) the Gotchu (Korean sweet-chilli fried chicken, coleslaw, pickes and mayo). Tiger Burger’s menu also features hot chicken with a variety of coatings, including Nashville-style sauce, hot Korean and sweet chilli. The venue is open from today for dine-in and takeaway custom, with the space itself boasting an old-school and classic feel, courtesy of hand-painted signage. Be sure to follow along on socials for an up-close look at the offering.

Park & Cove x Labart
One of Queensland’s best chefs is set to make his way to the Sunshine Coast later this month for an exclusive one-night-only event as part of this year’s Noosa Eat & Drink Festival. Hosted at Park & Cove, the dinner will see Andy and Alex putting their culinary talents towards delivering an elevated take on the Sunshine Coast’s food culture via a four-course set menu brimming with local produce sourced from the likes of Ten Acres, Noosa Reds and Coolbardie Olives.
