From word of two new neighbourhood bistros opening in the suburbs to a bright brunch spot coming to Newstead, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

Sauce Bistro
This year is shaping up to be a big one for fans of neighbourhood bistros. Later this month, a pair of hospitality veterans will open Sauce Bistro on Frasers Road in Ashgrove, giving locals a community go-to for quality food, wine and easygoing hospitality. Owned and operated by chef Stuart and sommelier Misa, the 30-seat neighbourhood eatery will see the pair draw upon their extensive experience to create a welcoming, family-friendly venue that blends refined European-style dining with relaxed local charm. Working in collaboration with Scott Bagnell of Techniche Design, Sauce Bistro will feature a warm banquette-lined interior, a striking live-edge camphor laurel timber bar and outdoor seating fashioned from reclaimed wine barrels. The menu will focus on house-made charcuterie, fresh pastas, and share-style mains such as dry-aged pork and rib-eye, with everything – from the pasta to the cured meats – crafted in-house. Sauce Bistro’s 120-strong wine list will span independent, biodynamic and international producers, complemented by a tight cocktail offering. Sound like your kind of restaurant? You don’t have long to wait – Sauce Bistro is expected to open in early-to-mid November.

Following the success of her Racecourse Road concept Freddie’s, Justine Zulueta-Khoury is expanding her bright, community-focused cafe concept to the heart of Newstead, with a fresh-faced Freddie’s location set to open later this month on Skyring Terrace. Located at the base of MIRVAC’s new LIV Anura building, the Newstead noshery will mirror its Ascot sibling’s clean, welcoming aesthetic – think glass frontage, greenery, light wood furnishings and a relaxed, youthful vibe. Freddie’s Newstead will offer an approachable, modern brunch experience that blends nourishing, health-conscious dishes with brekkie classics, including best-sellers such as chilli scramble, green eggs with halloumi, tacos and fresh salads, alongside staples like bacon and eggs, and a range of vegan-friendly options. Coffee comes from long-term local supplier Bare Bones Coffee, ensuring the same consistency and quality that Freddy’s fans have come to love.

Rosé Gelateria
Judging by the scorching temps we’ve been experiencing recently, it’s safe to say that Brisbane is well and truly entering gelato season. Arriving just in time for the summer shift is a brand-new outlet from the Rosé Gelateria crew, which is opening a chic dessert destination on King Street in Bowen Hills in mid-November. The brand’s fourth store (and second in Brisbane) will also be its most elevated design to date, with the 75-sqm venue – similar in size to the Sanctuary Cove location – featuring a refined, cafe-style fit-out with elegant design details and high-end finishes across indoor seating and a large booth area. Guests can expect the full Rosé Gelateria offering, including artisanal gelato, coffee, cookies and sweet treats, all served in a warm, pastel-hued space designed for lingering. Cherished Brisbane landmark, the Breakfast Creek Hotel, is set to enter an exciting new phase this month, with the unveiling of phase one of a multi-stage $2.75-million revitalisation project. The Brekkie Creek team will soon lift the cloche on its new-look Spanish Garden Steakhouse, boasting a refreshed interior design scheme, brand-new pizza kitchen, expanded capacity and the installation of air-conditioning. Brought to life by Cayas & Ward Architects and Herron Coorey Builders, the updated Spanish Garden Steakhouse nods to the legacy-laden pub’s past, with modern additions like exposed brick and warm timber finishes integrating with the venue’s heritage architecture. The menu has been updated, with guests soon to be treated to mouth-watering woodfired pizzas alongside Brekkie Creek’s esteemed steak offering, which showcases prime cuts from the likes of Darling Downs, Nolans, Five Founders, and Black Onyx. In addition to serving XXXX off the wood, the venue will now also boast a boosted cocktail selection and expanded wine list. Phase one if the Breakfast Creek Hotel’s rejuvenation will be completed by the end of November, with more upgrades – including new private event spaces and outdoor-dining areas – to be revealed in 2026.

Bar Cooper’s and Jane’s Deli
In case you missed the news last week, the team behind one of Brisbane’s best cafes has revealed that it is expanding its footprint with not one, but two new projects in Coorparoo. Leaham Claydon and Jianne Jeoung of Korean-inspired cafe and wine bar Snug are currently hard at work putting the finishing touches on woodfired bistro Bar Cooper’s and Jane’s Deli, a sandwich, smoothie and specialty goods spot. Located next door to Leaham and Jianne’s debut venue, Bar Cooper’s will channel elevated pub-style comfort with dishes like garlic-butter pipis, wagyu cheeseburgers and wood-roasted fish, complemented by a globally inspired wine list and selection of classic cocktails. Sharing Snug’s warm, timber-accented aesthetic, the 45-seat bistro aims to be a relaxed neighbourhood go-to for locals. Meanwhile, Jane’s Deli will focus on sandwiches, smoothies, charcuterie, cheeses and pantry goods – balancing everyday staples with inventive twists.
