
From word of a cafe, bar and restaurant in Banyo to Dutton Park’s slick new coffee spot, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …
Rossco’s Cafe, Bar & Grill
In the coming weeks, Banyo locals will be gifted a brand-new family-owned, Mediterranean-inspired venue designed for morning coffees, casual lunches, sunny afternoon sips, intimate dinners and memorable celebrations. Rossco’s Cafe, Bar & Grill is the brainchild of Stuart and Jackie Garbutt, a pair of northside locals eager to create a true neighbourhood gathering place that they hope will bring people together “through food, hospitality, community and kindness”. An 18-month transformation process has transformed Rossco’s Tufnell Road space completely, with a warm palette of natural materials and soft textures spread across cafe, restaurant and beer garden spaces, with the latter boasting an olive tree – which the Garbutts describe as a symbol of peace, family and shared moments. Rossco’s food offering will be crafted with seasonal ingredients sourced from Queensland and Australian producers, paired with a list of approachable wines. Throughout the mornings, Rossco’s will serve killer coffee, grab-and-go items and dine-in nosh from 6:00 am daily, while the restaurant and beer garden will operate from Wednesday to Sunday. Locals don’t have long to wait – Rossco’s Cafe, Bar & Grill is expected to open later this month.

ZMiRK
If you’re struggling to keep your energy levels high during these final weeks of 2025, take note – a brand-new coffee spot is set to open in Dutton Park, one promising enlivening brews paired with a menu of simple, thoughtful and comforting bites. ZMiRK is the creation of two Thai-born couples that will be applying their deep hospitality experience to daytime trade, offering a fresh, cross-cultural take on breakfast alongside specialty coffee, matcha and house-made drinks. Set in a clean, minimal and slightly moody space opposite the South Brisbane cemetery, ZMiRK will blend dine-in comfort with grab-and-go ease, offering light toasties, Asian-influenced brunch favourites and vibrant drinks crafted by a team that has spent years in Brisbane’s kitchens and front-of-house. Landers Pocket
After months of eager anticipation, multifaceted food, drink and entertainment precinct Landers Pocket is finally opening to the public this week on Wednesday November 19. The 800-person brewery, distillery and gastropub will join leading golf performance venue Golf Central in creating an exciting family-friendly destination for Brisbane locals, with 4 Pines Brewing and Never Never Distilling Co. each establishing a boutique manufacturing presence on site. The bar’s 32 draught taps will pour 4 Pines Brewing’s core range, as well as two rotating limited-release beers that are brewed in house. Meanwhile, Landers Pocket’s kitchen will pump out a menu showcasing local produce and seafood, which can be enjoyed across the venue’s interior and sprawling beer garden spaces, as well as a number of event and function areas. Brolly Coffee
In case you missed the news, Alison and Brett Hutley – the couple responsible for revolutionising Brisbane’s lunch scene 13 years ago with their boutique quick-service salad bar Botanica – are set to dip their toes back into the coffee realm with brand-new caffeine dispensary, Brolly Coffee. Opening this month in the former Couverture & Co. space on Enoggera Terrace, Brolly will be a bright grab-and-go spot offering express eats (think breakfast cups, chia puddings and pastries), quality Single O coffee, specialty iced drinks and a calm atmosphere. Drawing on their previous coffee venture, Greenhaus, the Hutleys are eager to create a cosy nook with terracotta tiles, timber furnishings and just a few seats for those looking for a spot to take a time out.
