Sprout Artisan Bakery is opening a new bricks-and-mortar cafe in Newstead, marking the next chapter for the much-loved pastry purveyor. Slotting into a riverside spot on Skyring Terrace, the venue will expand Sprout’s offering beyond the cabinet with a sit-down breakfast menu. Expect laminated pastries to play a starring role, alongside coffee, iced teas and bakery classics to go.

Breakfast, but Sprout-ified. That’s what Newstead locals can expect when Sprout Artisan Bakery opens its latest outpost in the inner-north enclave.

The pioneering pastry peddler is planting its flag in Newstead following the closure of its much-loved James Street dispensary and the opening of its production headquarters in Albion. The team has secured a prime position at the base of Mirvac’s LIV Anura development on Skyring Terrace – but this isn’t just a straight retail replacement.

Instead, Sprout is using the move to raise the bar, unveiling a cafe-style concept that expands on its cult-favourite baked goods with a more considered, sit-down breakfast offering.

“I feel like we owe it to our customer base to continually step up and offer something more,” says co-founder Rebecca Foley, who launched Sprout alongside partner Lutz Richter in 2014. “We just feel like there’s a way that we can showcase what we do in a more sit-down setting.”

While Sprout’s departure from James Street is a blow for the strip’s croissant scene (Sprout pastries are still available at Allpress Espresso’s new coffee bar on Robertson Street), the opportunity to relocate one suburb over proved too good for the team to pass up.

“We knew in the back of our mind that we had to be on the lookout for something new,” says operations manager Jena Chupungco. “This is still servicing that demographic and the clientele that we’ve developed on James Street – now they get to have breakfast or sit down along the river and experience what we are able to provide.”

So, what would a Sprout cafe actually look like?

Designed by Collectivus in collaboration with construction specialists Lowry Group, the fit-out will deliver a bright, airy space that balances neutral tones with dark timbers. Around 22 seats will be spread across wall-hugging banquettes and a street-facing, bar-height table, with potential footpath seating also in the works. A pastry display and coffee counter will greet guests on arrival, though it’s the kitchen – and what’s coming out of it – that’s set to steal the spotlight.

While the Sprout team is keeping tight-lipped about the cafe’s dine-in menu, Rebecca and Jena confirm that the kitchen crew will be putting the bakery’s dough to good use across the entire offering.

“We are thinking of using our laminated pastries more and incorporating them into our breakfast offering with a little bit of a spin,” Jena reveals. “We’ll be serving classic flavours and making baked goods that other people don’t have for breakfast dishes.”

“It could be French toast with our croissant, for example, or it could be a croissant basket with eggs,” adds Rebecca. “Pastries will still be in the cabinet, we’ll have fresh sandwiches and toasties, bread to go, maybe some cakes and things that we haven’t done before.”

The cafe will serve caffeine sourced from Coffee Supreme, while other beverages, including iced teas (a smash hit at Sprout’s Albion HQ) and frappe smoothies, will also be on offer.

Paired with the recent launch of its Albion dough dojo, the Newstead opening signals a new era for the long-running bakery – one that builds on its reputation while pushing confidently into new territory.

“These days, going out for breakfast is a luxury – we want you to feel that you’re still getting value, intrigue and a nice experience,” says Rebecca. “This is our chance to evolve our offering. It’s not just going to be what you saw on James Street.”
