This July, Halcyon House will mark a decade of refined coastal hospitality with a celebration as thoughtful as it is delicious. Nestled on the shores of Cabarita Beach, the boutique hotel is hosting By the Sea – a special two-day dining event bringing together a pair of two of Australia’s most respected chefs, Danielle Alvarez and Andrew Milford, for a collaborative culinary experience celebrating seasonality, storytelling and place. Held across one candlelit dinner on Saturday July 5 and a relaxed long lunch on Sunday July 6, By the Sea offers a rare opportunity to experience a menu designed by both Danielle – known for her elegant, produce-driven cooking – and Andrew, executive chef at Halcyon’s hatted restaurant, Paper Daisy. Together, they’ll serve a considered three-course menu paired with Louis Roederer Champagne, celebrating the best of the region’s growers and producers with a signature sense of restraint and creativity.

Danielle returns to Halcyon House following a sold-out gourmet weekend in 2018, bringing with her a reputation shaped at iconic kitchens including The French Laundry and Chez Panisse. Since making Australia home, her work – particularly at Fred’s in Paddington – has helped define a new wave of modern-Australian cooking, rooted in season, simplicity and soul. Andrew, meanwhile, has been with Paper Daisy since 2016, taking over the helm in 2024 with an approach that champions local produce and coastal character.

“The provenance of ingredients and seasonality is an important part of our philosophy at Paper Daisy,” Andrew says. “We love sharing the story behind each dish and this collaboration allows us to take guests on a journey when they dine with us.”

The experience includes a Roederer champagne on arrival, a three-course menu and a take-home Halcyon candle keepsake. As always, the setting at Halcyon does much of the work – its quiet luxury, thoughtful interiors and ocean backdrop set the stage for something that feels both intimate and special.
