Guinness, Greggs and deep-fried Mars bars – Rosella’s Bar is hosting a British takeover

Mondays at Rosella’s Bar are about to get a whole lot more interesting. The Burleigh Heads venue is kicking off a new series of takeovers called Cooked, inviting chefs to step into the kitchen and reimagine the Australiana-inspired bar menu for one-night-only.

First up is an all-things-British takeover on Monday March 16, led by chef Tom Norbury, previously head chef at Norté and sous chef at Rick Shores.

For the one-night-only event, Tom will be serving up a playful menu that nods to classic British comfort food while adding a few unexpected twists. The snack lineup includes Pringle ceviche, simple bread and butter, a fish-finger sandwich with tartare sauce, and a reworked take on the iconic Greggs sausage roll – a cult British staple that’s getting the Rosella’s treatment.

“Everyone grew up on fish-finger sandwiches, but instead of the boxed kind we’ll be making our own fish fingers. We’re keeping the shitty white bread though – that’s the iconic part,” Tom tells us.

Joining Tom in the kitchen is Melvin, originally from Kuala Lumpur, who will be cooking what Tom confidently describes as “the best butter chicken of your life”, served simply with rice as the evening’s main event.

Dessert leans heavily into nostalgia. Expect chocolate concrete cake and custard – a throwback to British primary school canteens – alongside sticky toffee pudding with vanilla ice-cream, because no British-inspired menu would be complete without it.

And for those who like their Mondays to stretch a little later, the night rolls into a late-night menu from 9pm, aimed squarely at hospo workers and anyone keen to keep the evening going. Think veg pakoras with mint chutney, chips and gravy, and a cheeky classic – the legendary deep-fried Mars bar.

In keeping with the theme, Guinness will be pouring on tap for one day only, adding another layer of pub-style authenticity to the night.

The British takeover marks the first in a new run of Monday guest-chef events at Rosella’s, with future instalments set to spotlight different cuisines and visiting chefs. If the opening night is anything to go by, Mondays in Burleigh may soon become the most exciting night of the week to head out for dinner.

The event is walk-ins only, with no reservations, so if you’re keen to grab a sausage roll, a pint of Guinness and maybe even a deep-fried Mars bar, you’ll want to get in early.
