Fast, fresh and full of flavour – Fishbowl has arrived in Nobby Beach, bringing its cult-status bowls and no-fuss food philosophy to the buzzy beachside strip. Transforming the space at 2215 Gold Coast Highway, which was previously home to Zephyr Tapas & Bar, the brand-new Fishbowl spot is set to become your new favourite post-surf, school run, sweat session or beach walk pit-stop.
Bondi-born salad bar Fishbowl has officially opened its newest Gold Coast location in Nobby Beach, bringing its brand of healthy, fast-casual dining to the strip. “We’ve always seen Nobby Beach as a cultural hub on the Gold Coast,” says co-founder Casper, who launched the brand in 2016 alongside friends Nathan and Nic. “It has such a unique energy and high standards as a community, so we wanted to create a restaurant that really reflects that.”
The light-filled new space features an elevated fit-out that feels more like a restaurant than a grab-and-go eatery. Custom furniture, stone counters and original artworks from free-surfing pioneer and artist Ozzie Wright give the restaurant a polished, coastal edge that matches its surroundings. “We wanted the design to speak to the area,” Casper explains. “It’s about showcasing local art and music as much as it is about the food.”
Fishbowl has built its reputation around Japanese-inspired salad bowls, made-to-order with fresh ingredients that are processed and delivered to each store daily. The menu sticks to the brand’s ethos of keeping things simple yet flavourful, with signature options like The O.G. (salmon sashimi, seaweed salad, edamame and crispy shallots) alongside build-your-own bowls layered with proteins like miso-glazed salmon, tofu or beef brisket. Seasonal collaborations, such as the current Chantal Duncan-designed bowl, add a touch of creativity to the line-up.
Despite having more than 50 locations around Australia, as well as one in New York City, each location is considered for the area in which it resides. “We call it the ‘one store mentality,’” Casper says. “Even though we have stores around the world, we approach each one as if it’s the only store we have. That means connecting with the local community and delivering the best experience we can.”
Fishbowl’s arrival at Nobby Beach cements its place as a go-to for fresh, quick meals that don’t compromise on quality.
