As we edge closer to summer, Saturdays in Nobby Beach now come with a new ritual. Rooftop favourite Sueño has unveiled a Latin-inspired brunch built for sipping and snacking in the sunshine. Think tableside Caesar salads, vibrant plates made for sharing and bottomless margaritas that set the tone for an indulgent weekend. It’s a brunch experience that feels true to Sueño’s coastal DNA – generous, convivial and a little theatrical. Here’s everything you need to know …

Leaning into Sueño’s spectacular open-air setting, the new brunch packs theatre and flavour into a two-hour feast. At the heart of the experience is a piece of culinary history. The iconic Caesar salad, first tossed in Tijuana in the 1920s, became famous for its tableside presentation – and that tradition lives on here. Guests watch as chefs prepare the salad in front of them, anchoring the menu with a touch of old-world charm and excitement.

The brunch dishes strike a balance between light and lively and richly indulgent. Freshly shucked oysters with aji mignonette, burrata with Mexican onions and pequin chilli, hibiscus-laced watermelon ceviche, buttery shellfish rolls, and chargrilled chicken with habanero and buttermilk are just some of the highlights. It’s food that feels celebratory, made for sharing in good company against the backdrop of sea air and rooftop views.

For those keen to keep glasses topped, Sueño offers a Bottomless Brunch Package for $149 per person, featuring two hours of Tommy’s Margaritas, mimosas, house wines and Sueño’s own Chango cerveza-style lager. A non-alcoholic package for $119 per person keeps things inclusive with zero-proof cocktails, non-alcoholic beer and soft drinks.

Head chef Rodolfo Malinverni says it best – “The heart of Latin dining is generosity and theatre, it’s food that’s meant to be shared and celebrated.” That spirit is evident in every detail, from the spectacle of the Caesar to the rhythm of plates landing on the table and glasses clinking.

With its breezy rooftop outlook and a menu that encourages connection through flavour and theatre, Sueño’s Saturday brunch is a vibrant new fixture on the coastal dining calendar. Brunch is served every Saturday from 12:00–2:00 pm, with reservations recommended.
