



One Eighty has always operated on a single, clear premise – take a seat, trust the chef and let the kitchen lead. The omakase menu has been the whole point, and for a lot of diners, it still is. But after consistent requests from guests wanting to order another round of a favourite dish, or simply come in midweek without committing to the full journey, owner Daiji Takashima has decided to make it an option – at least for now.
Starting this winter, One Eighty is adding a la carte to the mix. Available on Wednesdays and Thursdays only, the limited menu runs alongside the existing course offering rather than replacing it. For regulars, it’s a chance to revisit the dishes they haven’t stopped thinking about. For newcomers, it’s a more flexible introduction to the One Eighty experience.
Importantly, while the format has evolved, the philosophy hasn’t. The kitchen remains under the guidance of head chef Akihiro Kitade, whose career began with the opening team at Tokyo’s Yakitori Abe before he went on to launch Yakitori Haruka in the city’s upscale Shirokane district. His expertise has earned Bib Gourmand recognition in the Michelin Guide Tokyo in both 2022 and 2023, along with consecutive appearances in Tokyo’s Best Restaurants from 2021 to 2023. The same premium ingredients, meticulous techniques and attention to detail continue to underpin every dish, whether you’re settling in for the signature course menu or ordering a la carte at One Eighty.
