
For as long as most Gold Coasters can remember, Paddock Bakery has been the answer to just about every cafe-related dilemma. Meeting a friend? Paddock. Brunch with the family? Paddock. Visitors in town? Definitely Paddock. Since opening its charming Burleigh bakery, it’s built a fiercely loyal following, becoming a rare place that feels just as much a local institution as it does a destination. Soon, you’ll be able to get your Paddock fix without having to find a park on Hibiscus Haven. Here’s what we know …
In excellent news for sweet tooths, the much-loved Paddock Bakery is taking up residency at Pacific Fair, bringing its signature sweets, specialty coffee and freshly baked breads to a brand-new 30-seat space behind H&M on the ground floor. But this isn’t simply a copy-and-paste version of the original – the shopping-centre outpost will debut an exclusive build-your-own cold foam bar, giving caffeine devotees plenty of reason to make the trip.
The customisable drinks concept starts with your choice of four cold bases – cold brew, iced latte, iced matcha or an exclusive cinnamon doughnut iced latte – before you crown it with foamy dessert-inspired toppings like hazelnut brownie, creme brulee, raspberry Vovo, banana bread or Dubai chocolate. Then comes the finishing touch, with textured sprinkles including Paddock cookie crumbs, Biscoff and coconut. Feeling overwhelmed by the possibilities? The creme brulee doughnut combination comes highly recommended.
Of course, it wouldn’t be Paddock without the bakery cabinet that’s inspired countless detours to Burleigh. Expect all of the signature sweets you’ve come to know and love, from cookies to cakes and pastries, baked fresh daily. Woodfired sourdough will also be available until sold out, alongside sandwiches and salads for those after something a little more substantial.
Coffee will continue to be a serious affair, with Paddock partnering with Sydney specialty roaster Single O and pouring its Collider house blend alongside the full espresso menu. Beyond coffee, you’ll also find matcha, house-made iced teas, cold-pressed juices, over-the-top shakes and smoothies, plus a limited-time signature hot chocolate featuring melted Lindt chocolate, house-made foam and a torched marshmallow.
