Next month, the crew from Sydney’s Cantina OK! will be taking a holiday to Brisbane, teaming up with the team at The Calile Hotel’s Lobby Bar to shake up some fresh, customised cocktails for one night only.
Lending weight to the argument that sometimes size doesn’t matter, Cantina OK! – the 20-seat cocktail bar housed inside a converted one-car laneway garage – has become a mainstay of Best Of lists since opening in 2019. Famed for its creative list of cocktails and impressive selection of imported mezcal, the Sydney sipping spot is a fixture of The World’s 50 Best Bars list.
In great news for margarita maniacs, from 5:00–7:00 pm on Tuesday June 17, Cantina OK! will pop up at Lobby Bar at The Calile for the second iteration of the hotel’s Rooftop Harvest series, which celebrates culinary collaborations, experimental eats and explorations of ideas. Cantina OK! venue manager Jordan Grocock and creative lead Jaxon Kite will be crafting a customised cocktail using home-grown ingredients from The Calile Hotel’s rooftop garden winter harvest. Inspired by the hotel itself, the Sandia OK! cocktail will be a green and pink margarita inspired by the colours of The Calile’s pool. The sip will be made using fresh lime and cranberry hibiscus leaf from the rooftop garden, as well as makrut lime-leaf tequila and fluffy shaved watermelon.
Meanwhile, the Lobby Bar team will be dispensing a Marigold Highball (created by Michael A. Valentine) – a twist on a classic highball using house-made shrub, marigold leaves, coconut vinegar, Red Mill coconut rum and soda water. There will also be bespoke bar snacks on offer, crafted using ingredients from the June harvest. Tickets are free but you must register for entry – click here for more information!
