Straddling the border of Newstead, Teneriffe and The Valley, Greenhaus is one of the most cherished coffee spots in the inner-north bubble. You can credit Declan Gamack for Greenhaus’ popularity. Since taking over Greenhaus, Declan has transformed the cafe into one of the most popular spots for killer coffee, bang-on baguette sandwiches and service with a smile. We spoke to Declan about his hospitality ethos and what he loves most about working in the Newstead area.
To start, we’d love to know a bit more about you! Many will know you as the smiling face behind the coffee counter at Greenhaus – can you tell us a bit about your hospo journey so far?
Of course! Although I did some cafe and retail work when I was a teenager, I actually worked mostly in an office until a few years ago. I studied business with a major in accounting so throughout my degree I was an undergrad accountant in the city. After graduating I moved to London where I worked in a commercial role as a category analyst for a start up food brand. Both office roles were incredible for different reasons and I often lean on those experiences to help me these days.
When I finally returned from London, I joined the team at Botanica Real Food. The owners, Ali and Brett, took me under their wing and taught me everything I needed to know. I made so many mistakes, but they were patient and it all worked out in the end. Ali and Brett also owned Greenhaus Coffee, which is situated right beside their Teneriffe store. I loved picking up shifts at their cafe and so it was the perfect scenario to buy the cafe from them when the opportunity arose.
What is your personal philosophy when it comes to hospitality and customer service?
Remember people’s names and keep up with their lives. You have to be genuinely interested! You don’t want people to feel like a stranger when they come get a coffee from you every single day.
What do you think is the most fulfilling aspect of your job?
When people come back! It makes my day when I accumulate new regulars. There is so much choice and variety for coffee these days – we’re literally surrounded by options, so I absolutely love when I see a familiar face back for another coffee.
Greenhaus is situated at the doorstep to Newstead. What do you love about the area and what do you think makes it such a special place to live and work?
The bubble is such a unique place – it’s kind of like a little town. Everyone knows everyone and that makes it so much fun. Don’t ever think you can duck out to get some milk from the shops without running into someone you know. I do love that though, it’s a community.
Your cafe is beloved by Newstead locals – in your opinion, are there any qualities that you believe Newstead locals share?
I think Newstead locals love a routine. They’re always up early for some exercise with a coffee and then off to work. I also feel like there is such a strong energy in the bubble – everyone is so hard working. It’s amazing having so many inspiring people include Greenhaus in their daily routine. I get to hear about what everyone is working on, training for and studying for and I love it – bubble locals are hustling!
When you’re not slinging lattes and flat whites, what are some places in Newstead that you love to dine at?
I’ll probably be begging Paolo for a table at Beccofino most weekends. I also love going for lunch at New Farm Deli!
Are there any local stores that you turn to for a bit of retail therapy or spots you frequent for self-care?
Does The Standard Market Co. on James Street count? Friday nights are normally steak night with a red wine – that’s my kind of self-care.
Is there a hidden secret or an underrated gem in Newstead that you think more people should know about?
Greenhaus Coffee!
As Brisbane continues to evolve, Newstead will no doubt remain a flourishing epicentre of culture. In what ways are you excited to see Newstead grow in the coming years?
I’m excited for more people. With so many new beautiful buildings it will only bring more life to the area. I’m excited to accumulate new regulars and see what other businesses open – I think the bubble is just getting into its stride!
