







One of Brisbane’s favourite sandwich spots has expanded south of the river. Over the weekend, Sunny Side Sandwiches officially cut the ribbon on its brand-new East Brisbane location, with locals flocking to sink their teeth into schnitty sangers, saucy Reubens and bang-on breakfast sandwiches. Mack Bowers and Charline De Conto had a simple goal when they first opened Sunny Side Sandwiches in 2021 – to give Windsor locals the sambo stop they were crying out for. Little did they know they’d be founding a budding sandwich empire but, five years on, that’s exactly what they’ve got on their hands.
“The goal when we first opened at Windsor was to answer the question ‘Where do you go to get a good sandwich in Brisbane?,” explains Mack. “We’ve just responded to the market from the first day we opened.”
Responding to the market has been a viable business strategy for the Sunny Side squad, which has spent 2026 refining its menu and streamlining its operational processes. At the same time, the crew has planted seeds for expansion, last week capitalising on an increasing amount of cross-river interest by opening a brand-new Sunny Side Sandwiches location on Stanley Street East in East Brisbane.
“There are a lot of options south of the river, so it was hard to decide exactly where to go,” says Mack. “We really needed more seating capacity – customers have been telling us that for a long time.”
Taking over the site previously home to Barra Boys, Sunny Side has solved the issue of space. Though boasting the same internal dimensions and kitchen layout as its OG Windsor store, Sunny Side East Brisbane features an additional 60-sqm of shaded seating.
Clui Design and Lowry Group have worked on the aesthetic and fit-out. In addition to the double-sided sandwich bar, the build has added a few unique touches to set it apart from its sibling locations, including a window looking into the baking area. Positioned overlooking Stanley Street, Sunny Side’s bright-yellow signage doubles as a beacon, declaring its presence to those passing through on the way to Woolloongabba and beyond.
“I love the fact that Woolloongabba and East Brisbane are connected to the eastern suburbs a little, as well,” adds Mack. Plus, it’s a fun and quirky neighbourhood, which really suits our brand. We are definitely not a shopping centre brand.”

All of the staple options are here, including the brekkie sandwich with soft scrambled eggs, streaky bacon and kimchi mayo, the crowd-favourite panko-crumbed chicken schnitty sandwich (and its spicy and vegetarian variants), the Reuben sandwich, and the panko-crumbed snapper sandwich. All sandwiches are served on Sunny Side’s signature shokupan bread, which is baked in house every day.
Rounding out the offering are sides (hash browns and fries), freshly squeezed orange juice and cold-brew coffee. Swing through this week and you’ll even find a menu item exclusive to East Brisbane.
“The shokupan cinnamon scroll is exclusive to East Brisbane … for now,” says Mack.
