
In late October, the group behind La Bodega will open a brand-new venue in Bulimba. This time, the crew is swapping tacos for tzatziki. That’s right, Greek food is set to take centre stage at Chará – the team’s new restaurant taking shape on Oxford Street. Expect sun-dappled spritzes, succulent seafood, woodfired proteins and much more. Here’s what we know …
It feels like the paint has only just dried on La Bodega’s Fortitude Valley outpost, and already Anna Brobjer is planning her next venue.
This time, however, the head honcho of All The Good Things Group (which also operates OLLI Italiano) is shifting gears, pivoting away from Mexican and Italian cuisine in favour of a style of fare that the she holds even closer to her heart.
In late October, the team will cut the ribbon on its new Greek-inspired restaurant, Chará, over in Bulimba.
For Anna and All The Good Things head of marketing and events, Maddy Colombus, Greece is a special place – one where formative memories were forged.
“A Greek restaurant has been big conversation for a long time,” reveals Anna. “Maddy has Greek heritage. I’m from Sweden, but my parents spent a lot of time in Greece with me when I was a child. I have very fond memories of going to the islands as a kid.”
According to Anna, Greek food has long been on the list of cuisines she’d love to tackle. But only after coming across Chará’s eventual home (located in Jadecorp’s Oxford Street hub, next to Darvella Patisserie and Melrose) did Anna feel like she’d found a space where it made sense.
“We just looked at each other and Anna goes, ‘Greek’,” says Maddy, recalling the group’s first site inspection. “We have a lot of Greek spots in The City and West End, but on this side of Brisbane, not so much. So we’re really excited about bringing something new.”
“Bulimba is a very community-driven neighbourhood,” adds Anna. “I think that locals appreciate something that’s done right – high quality produce and good service, which matches really well with what we actually want to do for this project.”
At its core, Anna says Chará will channel the easygoing contentment and deep-seated inner gladness that comes from Greek hospitality – from the food and drink to the ambience.
Subscribe for updates“Directly translated, chará means ‘joy’,” Anna explains. “That embodies what we want to do with this space – it’s about something a lot bigger than just putting food on a plate and calling it a day. We don’t want our guests to just come for food, we want them to come for an experience.”
Work will soon commence on a cosmetic overhaul of the Stella space. When it comes to aesthetics, the team describes the desired look as elevated but approachable, with textures and colours mixing to create a space that pops.
Seating will be divided between interior and exterior areas, with the courtyard expected to be a popular pit stop for locals fresh off the ferry.
As for the food and drink, Anna and Maddy confirm that Chará will hit all of the essential bases, from breads and dips to seafood and char-grilled meats. “We’ve got a woodfire oven in the kitchen, so I think that there’s a lot of dishes that will take a spin in there,” says Maddy.
Anna, who is vegetarian, assures us that the menu will offer plenty for herbivores and those with food restrictions.
“For me, it’s really important that you can come into a restaurant with a dietary requirement and you can still enjoy your meal without feeling like you’re a hassle,” says Anna.
Over at the bar, we’ve been told that Chará will pour a selection of Greek wines and beers, with colourful cocktails and spritzes also expected to be a key feature of the beverage program. All told, the group is most eager to help make guests feel as if they are holidaying in the Cyclades.
“Fresh food, beautiful produce, long lunches, enjoying time with family and friends, soaking up the sun in the beautiful courtyard – those things bring back memories even from my most recent trip to Greece,” says Maddy. “That’s what we’re trying to recreate here.”
With three venues already up and running, the All The Good Things Group is evolving into a hospo powerhouse on the rise. While Anna will be the first to say the group’s rapid evolution has come as a bit of a surprise, each milestone has come with an increase in confidence.
“We now have that knowledge base, combined with experience and maybe a little bit of crazy mindset – all of that has helped us feel like this is the right time,” says Anna.
