
One of Brisbane’s buzziest purveyors of baked goods is growing up. Jane Scrolls, the market-born cinnamon scroll specialist, will soon open a new production hub and cafe in Coorparoo, giving guests a glimpse at the behind-the-scenes magic while offering icing-topped swirls, focaccia sandwiches, specialty coffee and choccie milk off tap. Here’s what we know …
We can’t say for sure if Jane Scrolls began Brisbane’s current cinnamon scroll frenzy, but it’s safe to say that it had a hand in fanning the flames.
In just over a year, Hamish Pearce and Rebecca Ferguson have grown Jane Scrolls from confection-slinging curio to a market-based powerhouse. Since its debut at Milton Markets in late August 2025, Jane Scrolls has significantly swelled in scope, expanding to eight markets across Brisbane each weekend (the team also operated a pop-up at Indooroopilly Shopping Centre).
That growth rate mirrors the current demand for cinnamon scrolls, which are now commonplace at bakeries and cafes across Brisbane and the Gold Coast. For Hamish and Rebecca, that means many late finishes and early starts baking tray after tray of spongy, icing-covered swirls.
“Initially, we were doing 1500 scrolls by ourselves and that was just across two markets,” says Hamish. “This winter we were doing about 3000 scrolls per weekend.”
Throughout this time, Jane Scrolls has produced all of its products from a shared commercial kitchen space. Soon, though, the team will move into its own production kitchen in Coorparoo and – here’s the best part – it comes with its own cafe space.
Yep, in early October, Hamish and Bec will lift the cloche on Jane Scrolls’ own shopfront on Old Cleveland Road, transforming a former butcher opposite Coorparoo Square into a multifaceted site housing production, catering and retail.
“I see this as our headquarters,” explains Hamish. “We’re treating [Jane Scrolls] more like three or four separate businesses – you’ve got the catering, you’ve got the cafe and you’ve got the markets.”
The team is reaching the pointy end of the fit-out process, converting the interior into three distinct spaces. Guests will spend most of their time in the cafe, which will feature a cinnamon scroll display, a shiny new coffee machine and two automated coffee taps, plus seating for approximately 15 across an L-shaped bench and a number of stools.
Next door will sit a prep space, visible from the street via a large window at the front. Hidden towards the back is the main baking area, where Jane Scrolls’ ovens can be found.
From this oven will come an assortment of scrolls for customers to enjoy. Compared to the offering at the markets, cinnamon scrolls here will be served piping hot, as fresh as you can get – something Hamish is relishing being able to offer for the first time.
“I can guarantee that there’s nothing in this world that is better,” says Hamish. “It’s soft and it is indulgent. I want other people to experience that firsthand.”
The range will include the core range of Jane Scrolls’ rolls and a rotating special. Highlights will include the classic cinnamon swirl (topped with cream-cheese icing), The Billionaire (boasting a Kinder Bueno and Oreo filling with a Biscoff cream cheese coating), the Pecan Sticky Date (a spiced date swirl with sticky toffee and roasted pecans) and the salty Vegemite scroll with fresh pecorino cheese.
Subscribe for updates“We’re obviously going to launch with our scrolls – we’ve been doing it for a year now and even though we’re constantly trying to perfect the product, I think we’re pretty good at them,” says Hamish.
That said, Hamish is also eager to expand the offering beyond scrolls – expect a trio of house-baked focaccia sandwiches, featuring fillings like egg, crispy bacon and chipotle aioli, braised chicken thigh with rocket and fried onions, and a vegetarian sandwich with whipped feta, avocado and tomato.
The kitchen has also been upgraded with a pastry laminator, which Hamish says will be used to experiment with pastries further down the track.
“I love learning the intricate details about absolutely everything and if I’m not the best at something, it irks me,” says Hamish with a chuckle. “But I want to slowly learn how to do stuff. We’re going to recipe test it, launch it in small batches and get feedback.”
On the drinks front, Jane Scrolls has linked up with Single O, securing a blend for its milk-based coffee as well as a rotating single origin for black coffee. Two self-serve taps will pour bold brew and choccie milk, while hand-whisked matcha and a curated range of rotating specialty drinks will also feature.
“We’re going for really good takeaway coffee, but with enough optionality to spark people’s interest,” says Hamish.
The opening of Jane Scrolls’ bricks-and-mortar shopfront marks the end of a whirlwind chapter for the business, which has grown at a pace that Hamish and Bec couldn’t have predicted.
For Hamish, the new shopfront represents more than simply a place to sell cinnamon scrolls. It’s the next stage in a business that has grown far beyond the weekend market stall he and Bec started just over a year ago – and one that’s still gathering momentum.
“To grow something so rapidly, to the scale that we have, in the current climate … I think it’s really impressive,” says Hamish. “It’s a testament to the team to be able to expand as rapidly as we can.”
