For a long time, the humble sandwich was viewed as the safe option – quick, reliable, but rarely the reason you’d go out of your way. Lately, that’s shifted and across the Gold Coast and beyond, sandwiches are stepping into the spotlight – bigger, more considered and built to hit in all the right places. Not just something to grab on the run (although they are mighty convenient), but something worth seeking out. Down in Tweed Heads, Delightful is leaning into exactly that.

Tucked away on Stuart Street, a slight detour off Bay Street (just a stroll from Public Supply and Sun Devil Drinks Company), is where you’ll find Delightful. The tiny sandwich slinger with a sunny disposition is an extension of the well-established private catering arm, Deluxe Grazing. As it nears its third birthday, the small-but-mighty spot is finding its groove with Monique Bathie at the helm.

Since taking over as sole owner earlier this year, Monique has been leaning into experimentation, refining the offering and honing in on what’s landing with customers. Right now, that’s the build-your-own menu. For the uninitiated, it’s a choose-your-own path through breads, proteins, cheeses and sauces, built around exactly what you feel like eating. It’s simple, flexible and, judging by the steady stream of orders, exactly the kind of culinary freedom people are chasing.

“I feel like people come here because they can create the sandwich of their dreams,” Monique says.

Then there’s the cabinet – brimming with vibrant salad bowls and ready-to-go options for those who don’t feel like making decisions. The chipotle chicken has quietly become the go-to – crisp on the outside, smoky and saucy at its core. Add pickles and it all just works.

If you’re particularly hungry, it’s hard to go past the newly introduced conti rolls. Big in other parts of Australia but still relatively new around here, they arrive oversized and generously packed – long, crusty loaves loaded edge-to-edge with fillings. These are the kind you grip with both hands and fully commit to. There’s no need to build your own here – the combinations are already dialled in, from layered meats and sharp cheeses to fresh crunch and swathes of sauce that bring it all together.

The drinks are just as enticing. Coffee, smoothies and matcha form the base, with a rotating line-up of sweet, one-off specials that appear and disappear just as quickly. If you want to catch them, your best bet is to follow Delightful on Instagram.

Behind the scenes, the catering arm is leaning further into the corporate market – whether it’s a team lunch or a larger event, Deluxe has it covered. There are also pre-order lunch boxes for littles, with easy pick-up for nearby schools.

There’s a real energy to Tweed Heads right now, and places like this – small, evolving and closely tuned into what people actually want to eat – are at the centre of it. Because right now, a really good sandwich isn’t just convenient. It’s the whole reason you go.
