One of Surfers Paradise’s most recognisable beachfront venues is preparing for a dramatic new chapter, with Mediterranean-inspired restaurant and bar Valentina set to open inside Peppers Soul on Wednesday June 10.

Taking over the sprawling oceanfront site formerly occupied by Hyde Paradiso, Valentina marks the first Queensland venture from Table For, Accor’s dedicated food-and-beverage group, which has already delivered a string of acclaimed Sydney openings including Flaminia, Bar Allora and El Vista.

The venue itself has undergone a complete creative transformation, trading Hyde’s bright party energy for something warmer, moodier and more transportive. Inside, terracotta-toned walls, woven textures, striped banquettes and vintage-inspired detailing channel the effortless charm of a coastal European escape, while floor-to-ceiling windows showcase sweeping views across Surfers Paradise beach.

The menu, guided by Table For executive chef Rosy Scatigna and led by head chef Chantelle Richard-Preston, takes its cues from the coastal regions of the Mediterranean – spanning sun-soaked snacks, raw seafood, house-made pasta and generous share-style plates designed for lingering over.

To start, diners can expect warm, fluffy focaccia with sesame and garlic butter, Pacific oysters with vermouth mignonette, taramasalata finished with dill and Byron Bay tuna crudo with mandarin and chilli. Elsewhere, playful bar snacks include Valentina’s take on a Filet-O-Fish with tarragon tartar, chicken fritto with Calabrese dip and beef skewers paired with yoghurt aioli.

Larger dishes continue the tour of the coastline, ranging from king-prawn orzo with basil and linguine with macadamia pesto and pecorino to free-range harissa chicken with smoked eggplant, market fish with puttanesca sauce and a 300-gram Angus scotch fillet served with shishito peppers. Seasonal salads and vegetable-led dishes also feature heavily across the offering.

On the drinks front, Valentina is leaning heavily into aperitivo culture, with a cocktail programme created in collaboration with The Maybe Group – the hospitality powerhouse behind internationally acclaimed cocktail destination Maybe Sammy. The drinks list is designed for long afternoons and easy evenings, led by a dedicated spritz menu featuring everything from limoncello and strawberry variations to a lychee spritz with Ketel One and citrus. Beyond the spritzes, familiar classics are given a playful twist, including an olive sour finished with extra virgin olive oil, a passionfruit-and-jalapeno margarita and a coconut-and-thyme highball.

Desserts continue the balance of nostalgia and indulgence with offerings such as coffee caramel semifreddo with dark chocolate, lemon-and-almond torta with yoghurt ice-cream and mandarin sorbet finished with olive oil.

One of Hyde’s most beloved traditions will live on under the new concept, with Valentina set to host regular weekend bottomless long lunches alongside a weekly music program featuring local DJs and Latin-inspired sets.
