Sandwich lovers, here’s some news for you. A pair of coffee industry veterans are getting into the sanger scene with A Team Deli, which is set to open in Grange later this month. Taking over an antique shop on Days Road, A Team Deli is creating a Scandi-inspired space (complete with a stainless steel coffee counter and light oak timber furniture) that caters to the community’s everyday needs. The venue will operate on the mantra of “Built for everyday. Inspired by everywhere”, putting a fusion-style spin on the prototypical sandwich deli by incorporating flavours from various cuisines to deliver salivation-worthy items the city hasn’t seen before. While full details of the menu are still being kept under wraps, the A Team crew has revealed that the offering might include the likes of Japanese slow-cooked beef curry toasties on sourdough, crispy mortadella with soft scrambled eggs, provolone and Dijon on a milk bun, and banana bread with house cinnamon butter. Drinks will also be key to the offering, with creative beverages like iced lattes with banana bread cold foam and pistachio Mont Blancs available alongside specialty caffeine from Cavalier Coffee Roasters. Boundary Street in West End will soon score a new resident – one slinging a menu of lovely loaves, primo pastries and killer coffee. Samuel Bakehouse is currently taking shape in the space previously occupied by Lekki by Little Lagos, with the team giving the space a makeover ahead of its official opening towards the end of the month. Envisioned as a neighbourhood go-to that goes further than the traditional grab-and-go bakery, Samuel Bakehouse will offer guests a place to sit, meet, connect and linger over a lengthy list of drool-worthy goodies, like freshly baked patisserie (made with imported French butter), breads (from sourdough and rye to seeded loaves and spongy focaccia) and stacked sandwiches. On the coffee front, Samuel will sling silky brews made using beans from Melbourne’s Axil Coffee Roasters, as well as cold-foam-topped specialty beverages and matcha. Once open, Samuel Bakehouse will boast a modern, warm and inviting aesthetic, featuring darker tones, pendant lighting and linen curtains. One of the Sunshine Coast’s best bars is doubling up on the Mooloolaba esplanade. Later this week, Dean and Jeanelle Mariani (the duo behind award-winning tequila and whisky bar WAT Den) will open a brand-new 20-seat cocktail spot Hid Den at Mantra Mooloolaba. Inspired by the couple’s travels through Japan, Hid Den is taking cues from the country’s plethora of small bars and omakase-style chef’s tables to give guests a modern speakeasy experience – blending chic minimalism with detail-oriented service to elevate the drinking experience to new heights. Once seated, guests will be treated to a bit of cocktail theatre, with the Hid Den crew (led by venue manager and top bartender Bri Reilly) using liquid nitrogen, fire, smoke and molecular techniques to craft drinks like the Golden Summit (a Pornstar Martini riff featuring liquid nitrogen prosecco sorbet) and the Velvet Curtain (a clarified ruby-red sour, blowtorched tableside). Coyote’s Roadhouse
Hallmark Hospitality – the group behind Newstead’s Gas Hound Bar & Kitchen – is cementing its northern interests, opening its second Sunshine Coast venue, Coyote’s Roadhouse, later this month. The country-and-western-themed live-music bar is taking shape at the entrance to Big Top Shopping Centre on Ocean Street in Maroochydore, and will boast two live-music stages and the capacity to host up to 500 people. Space Cubed Design Studio is spearheading the design effort, crafting a space inspired by country towns and rodeo culture – think reclaimed timber, aged corrugated metal, worn leather, cowhide, vintage signage and memorabilia. Once open, Coyote’s Roadhouse will offer plenty of room for boot scootin’, plus electronic darts, pool tables, a bucking bull and a Big Buck Hunter arcade game. On the menu front, expect country-inspired drinks and a smokehouse-themed menu.

Pas de Chichi
In case you missed the news last week, renowned Brisbane chef Thierry Galichet is returning to hospitality with Pas de Chichi, a humble French-style bistro set to open in The Valley in October. Taking its name from the French expression meaning “no fuss”, the 30-seat restaurant will pair classic bistro interiors with Art Deco touches, an alfresco courtyard and a nine-seat comptoir, with Thierry overseeing the concept, recipes and wine list while a team of young chefs brings his dishes to life. The menu will revisit classic French favourites while exploring dishes from across the country, accompanied by a tightly curated French wine list, classic cocktails and aperitifs, with Thierry aiming to deliver the warm, personable service for which his restaurants have become known.

Nitō
After establishing Clarence as one of Brisbane’s best restaurants, chefs Ben McShane and Matt Kuhnemann are expanding their Fish Lane footprint with Nitō, a 70-seat Japanese-inspired grill set to open in November. Drawing on Ben’s experience in Japanese kitchens, the restaurant will combine Japanese ingredients and techniques with locally sourced produce, offering raw seafood, snacks, small plates and large-format dishes cooked over charcoal, alongside claypot rice. Set beneath a car ramp in Stockwell’s 51 Fish building, Nitō will embrace the site’s lack of natural light with a dark, moody and grungy interior, creating a louder, punchier counterpoint to Clarence’s restrained aesthetic. The beverage program will feature sake, highballs, cocktails, Australian and Japanese wines and champagne, with the team aiming to create a Japanese restaurant that feels distinctly relevant to Brisbane. Click here for more details.
